Christian Tschida wine will get you excited

Working and growing up in the traditionally shaped area of Burgenland Christian Tschida’s winery is located in the Austrian country side.  As Christian Tschida has an inimitable style he is often referred as the Enfant terrible in Austria’s winemaker scene. The reason for that might be that he produces red and white wines that are not necessarily typical for the area. Tschida is focussing on a unique style that the customer can taste. To accomplish this style he uses old vines that are around 40 to 60 years old, the wine is unfiltered and it is fermented without additive.

Christian Tschida is not producing massiv quantities of his fantastic wines. However, a lot of fine dining restaurant love his wines as a pairing for their menus. In addition you also can find his product in wine bars all around the world. Although he is from Austria, a wine loving country, his strongest markets are Japan, America and Northern Europe.

Saturne is contemporary French organic restaurant in Paris. It was awarded with one Michelin star and they are pairing their excellent food with organic wine.

Tschida’s Kapital I also described as „The Dark Side of the Moon“ is Cabernet Sauvignon and Zweigelt matured in a wooden barrel. Cool dark aromas surround the wine.

2. Mast Weinbistro (@mastvienna)

 

Being good friends with Christian Tschida Mast Weinbistro offers a great selection of Tschida wines. What is worth to mention is that Mast was awarded best Weinbistro in Austria by Falstaff magazine. So you can fully put your luck in their hands. In addition to their great wine selection they offer a farm to table food concept.

Himmel auf Erden II Maische is a lovely white wine by Tschida. Scheurebe and Muscat giving this wine citrus and herbal flavors that are accompanied by intense yeast notes. As asparagus season is coming up Himmel auf Erden II Maische could be a good pairing.

3. Leroy in London(@leroyshoreditch)

 

Wine bar and Restaurant in Shoreditch from Sommeliers Ed Thaw and Jack Lewens and Chef Sam Kamienko. Leroy was awarded one Michelin star in 2019. Leroy is a place to stop in for a glass or to share several plates of food, charcuterie, cheese or crudo with a bottle or two of wine.

Laissez-Faire reflects Christian Tschida’s way of working with his vines. It can be described as the controlled idleness and omission. The wine is a perfect pairing to white meat with creamy sauces or grilled fish.

4. Bar Freundschaft in Berlin(@bar_freundschaft)

 

Similarly to the other bottles Tschida always puts high emphasis on the label of the wine bottle. Domkapital Edition was designed by famous pop art artist Mel Ramos, who sadly past away in 2018. Domkapital is considered to be the red wine of the highest quality of Tschida. Only 666 bottles are produced with the Mel Ramos label. Above all, quality is over quantity.

Luckily, Bar Freundschaft offers the wine (if it is still available) to their customers. Bar Freundschaft is serving more than 4000 bottles of wine to their customers. In addition to their great wine selection Freundschaft is serving unpretentious but delicious food.

Forbes once featured the restaurant Taubenkobel as one of the coolest places to eat and the various restaurant guides are always full of praises for the French Alain Weissgerber, his wife Barbara and his father in law Walter Eselboeck. They are serving traditional recipes with regional products and a high emphasis on seasonality. The restaurant itself has a rustic yet elegant flair. Make sure to secure a spot on the terrace as soon as the sun is out. In addition, Taubenkobel also has a „Greisslerei”, which is a small grocery store, where you can buy produce and enjoy traditional but more casual food. 2. Mühltalhof, Unternberg, Austria

One of the most exciting young chefs in Austria is Philip Rachinger who has taken over the Restaurant at Mühltalhof from his father Helmut Rachinger. But don’t worry Helmut Rachinger is just a throw away from Mühltalhof in his new place called Fernruf7 (http://www.fernruf.at). In a very minimalist space he serves bread in a homemade oven, preserves and pickles herbs or vegetables and offers his guests some casual bites to eat. Philip Rachinger offers also regional but more sophisticated dishes. Located at the river Große Mühl you can go for a swim in the summer or just enjoy the sound of the splashing of the water. Family Rachinger will spoil you with culinary delights.

3. Doellerers Genusswelten, Golling an der Salzach, Austria

„Cuisine Alpine“ is Andreas Doellerer’s philosophy. As his restaurant is located near the Alps he is focusing on products from the area like wild undiscovered herbs or milk which is a central product of the Salzburg mountains. Doellerer is serving traditional yet refined and perfectly executed dishes. Some of them are inspired by his grandmother. Doellerers Genusswelten is an overall gourmet experience – as it also consists of a hotel, grocery store and wine shop. You are in very safe hands here when you just want to relax and enjoy a great culinary trip.

 

4. Gut Purbach, Purbach am Neusiedler See, Austria

Max Stiegel’s passion and philosophy for nose to tail cooking has transformed this grange to a culinary hotspot. Stiegel masters the liaison of French culinary arts and traditional dishes from Burgenland like no other. Gut Purbach only uses produce that are from the area around the Neusiedler See. Above all, Stiegel himself still collects herbs, berries or mushrooms in the forest if they are in season and available. Dine on the beautiful and idyllic terrace and experience traditional culinary treats. You can also head down the street to the winery of Hans Bichler and enjoy perfectly crafted wines like Pinot Gris, Pinot Noir or Chardonnay.

 

5. Landhaus Bacher, Mautern, Austria

One of the most decorated chefs in Austria is Thomas Dorfer from Landhaus Bacher in Mautern. Chef of the year 2009 by Gault Millau, Trophee Gourmet for creative cuisine by a la carte or chef of the year by Aral Schlemmer Atlas 2018 just to name a few. Yet Mr. Dorfer is not serving his guests pretentious food. He is focusing on regional products and serves modern austrian cuisine with mediterranean und international influences. The restaurant and hotel are furnished elegant but create a cozy atmosphere. Make sure to get a table on the terrace in the summer.

Easter treats are around the corner

Easter traditions are different all over the world. One thing that all festivities have in common are the sweets that are served during the easter holidays. Easter is one of the strongest days for chocolate producers all year. In the supermarket you can find all sorts and forms of chocolate variations like chocolate bunnies, chocolate eggs or chocolate nests. But it is the same stuff you can find every year. Boring right? Time to step up your easter treat game. Some of the world’s best chefs and cafes have created easter treats like you won’t find anywhere else.

 

We created a list with some of our favorite easter treats and where to find them:

 

 1. La Pâtisserie du Meurice par Cédric Grolet in Paris

He perfectly executed chocolate inside of a chocolate egg. The current world’s best pastry chef according to worlds50best is turning everything he creates into caloric gold. You won’t find many chocolate eggs as tasty as those. His store in Paris is always worth a visit.

 

2. Heston Blumenthal x Waitrose

One of Britains most creative chefs joined forces with retailer Waitrose to create chocolate Scotch Eggs. A British pub classic turned into chocolate. No wonder these eggs sold out in a short amount of time. There is still a slight glimpse of hope that Waitrose is going to restock those chocolate eggs before easter.

3. Bakehouse in Hongkong 

If there is anything like traditional easter treats in Britain it is the Hot Cross Bun. In case you are not familiar with a Hot Cross bun – it is a spiced sweet bun made with currants or raisins, marked with a cross on the top, and traditionally eaten on Good Friday in the United Kingdom, Ireland, Australia, Canada, New Zealand and South Africa. It has also made its way to Hong Kong and Bakehouse executed them in perfection.

4. Cracco in Milan

What the Hot Cross Bun is to the people from the UK , is the Colombe di Pasqua to the Italians. The dough of the Colombe is similar to the Pantone however it doesn’t contain candid peel nor raisins. The shape resembles the form of a dove the ultimate symbol of peace.

Asparagus season is coming up

This is an ode to asparagus. The season of this vegetable just started and runs til the end of June. Enough time to enjoy white and green asparagus as much as possible.  Not many vegetables are as healthy and versatile as asparagus. Asparagus is low in calories and a great source of nutrients, including fiber, folate and vitamins A, C and K.

Asparagus can be served as a side but it can also take the main part of the dish. The possibilities of cooking asparagus are endless. The Italians love it in their risotto,  the Germans love it with sausages or schnitzel served with sauce hollandaise and you can also find asparagus in sushi.

How to prepare asparagus

In case you never cooked asparagus there are three easy cooking techniques you can also master at home. You can cook asparagus in water, you can wrap it in aluminum foil and put it in the oven or you can grill it – depends on what flavor profile you prefer.
A good tip to detect if the asparagus is really fresh – just rub two pieces together and then you should hear a noise. Only then the asparagus has enough humidity inside.

Weinsinn in Frankfurt is serving the green asparagus with thai flavors , citrus and miso hollandaise.

Lyle’s in London has sourced their white asparagus from the Angers area, via Terroir D’Avenir. It is On the lunch menu with mead butter & almonds.
