Easter treats are around the corner

Easter traditions are different all over the world. One thing that all festivities have in common are the sweets that are served during the easter holidays. Easter is one of the strongest days for chocolate producers all year. In the supermarket you can find all sorts and forms of chocolate variations like chocolate bunnies, chocolate eggs or chocolate nests. But it is the same stuff you can find every year. Boring right? Time to step up your easter treat game. Some of the world’s best chefs and cafes have created easter treats like you won’t find anywhere else.

 

We created a list with some of our favorite easter treats and where to find them:

 

 1. La Pâtisserie du Meurice par Cédric Grolet in Paris

He perfectly executed chocolate inside of a chocolate egg. The current world’s best pastry chef according to worlds50best is turning everything he creates into caloric gold. You won’t find many chocolate eggs as tasty as those. His store in Paris is always worth a visit.

 

2. Heston Blumenthal x Waitrose

One of Britains most creative chefs joined forces with retailer Waitrose to create chocolate Scotch Eggs. A British pub classic turned into chocolate. No wonder these eggs sold out in a short amount of time. There is still a slight glimpse of hope that Waitrose is going to restock those chocolate eggs before easter.

3. Bakehouse in Hongkong 

If there is anything like traditional easter treats in Britain it is the Hot Cross Bun. In case you are not familiar with a Hot Cross bun – it is a spiced sweet bun made with currants or raisins, marked with a cross on the top, and traditionally eaten on Good Friday in the United Kingdom, Ireland, Australia, Canada, New Zealand and South Africa. It has also made its way to Hong Kong and Bakehouse executed them in perfection.

4. Cracco in Milan

What the Hot Cross Bun is to the people from the UK , is the Colombe di Pasqua to the Italians. The dough of the Colombe is similar to the Pantone however it doesn’t contain candid peel nor raisins. The shape resembles the form of a dove the ultimate symbol of peace.

5. Maelu in Munich

Easter eggs are extremely popular around the easter holidays. Maelu Cafe in Munich have created Easter eggs with a design twist. Forget the boring supermarket chocolate eggs and treat yourself with some real creative chocolate eggs.

6. Dominique Ansel in London

When it comes to creative baking there are not as many patisserie chefs as Dominique Ansel. The creator of the Cronut and other countless patisserie inventions is spoiling us with another creative twist. He transformed the soft boiled breakfast egg into a chocolate easter treat. Asparagus season is coming up

This is an ode to asparagus. The season of this vegetable just started and runs til the end of June. Enough time to enjoy white and green asparagus as much as possible.  Not many vegetables are as healthy and versatile as asparagus. Asparagus is low in calories and a great source of nutrients, including fiber, folate and vitamins A, C and K.

Asparagus can be served as a side but it can also take the main part of the dish. The possibilities of cooking asparagus are endless. The Italians love it in their risotto,  the Germans love it with sausages or schnitzel served with sauce hollandaise and you can also find asparagus in sushi.

How to prepare asparagus

In case you never cooked asparagus there are three easy cooking techniques you can also master at home. You can cook asparagus in water, you can wrap it in aluminum foil and put it in the oven or you can grill it – depends on what flavor profile you prefer.
A good tip to detect if the asparagus is really fresh – just rub two pieces together and then you should hear a noise. Only then the asparagus has enough humidity inside.

Kurt Gutenbrunner, one of our favorite Austrian in New York City, is serving white asparagus with sorrel and lime hollandaise in his restaurant Wallse in New York City.

 

 

Weinsinn in Frankfurt is serving the green asparagus with thai flavors , citrus and miso hollandaise.

Lyle’s in London has sourced their white asparagus from the Angers area, via Terroir D’Avenir. It is On the lunch menu with mead butter & almonds.

Best pizzas outside of Naples

What is so special about the pizza in Naples?

Neapolitan pizza, or pizza Napoletana, is a type of pizza that has its origins in Naples. It is made of fresh ingredients from the area of Campania like pizza dough, fresh tomatoes, fresh mozzarella cheese, fresh basil, and olive oil. The pizza is then baked for 60 to 90 seconds  in a minimum 450°C stone oven with a wood fire. The result is a fluffy, doughy and cheesy pizza that is slightly watery in the middle because of the fresh ingredients. Luckily, there are pizzas in other cities as well that are just as good as the pizza from Naples. So, we created a list with best pizzas outside of Naples that are really special:

1. Baest in Copenhagen (@baestcph)

Christian Puglisi and his team are sourcing organic produce of the highest quality and sustainability and transforming them into a truly excellent pizza. A place where the best Danish, local, sustainable and organic produce is combined with Italian craftsmanship. Instead of importing mozzarella, Baest makes it own their own by hand with the best raw milk and stretching it several times a day.  They only important a 500°C wood-fired custom made oven from Naples, which was built for them.

2. PST in Tokyo (@pizzastudiotamaki)

Have you heard of Japanese Neapolitan pizza? The term was used by owner Tamaki during interviews – although he has never been to Italy his restaurant is receiving a lot of praise for his amazing Pizza. You should interrupt your sushi marathon for this pizza place.

3. Pizzeria Mozza in LA (@pizzeriamozza)

If there was such a thing as LA-style pizza then you would probably find it here. The restaurant is run by Nancy Silverton and Joe Bastianich. Those two stand for great italian cuisine.

4. Robertas in New York (@robertaspizza)

Probably one of the most famous pizza places in the world. The pizza Robertas is serving is also know as american pizza. In addition, Robertas is always having a great wine menu. The menu features great winemaker like Christian Tschida.

5. Standard Serious Pizza in Berlin (@standardseriouspizza)

The team behind standard serious pizza are baking an authentic Neapolitan pizza with traditional methods and authentic Italian ingredients. The result is a pizza that is as tasty as the ones in southern Italy.

6. Pepe in Grani in Caiazzo (@francopepeingrani)

Is Pepe in Grani the world’s best pizza restaurant? Franco Pepe is the godfather of Neapolitan pizza. Pepe has received a lot of praise from everybody in the industry for his pizza. The secret behind the pizza? Technique and Pepe is only sourcing best produce available. This place is definitely worth the travel.
